The purpose of this research is to determine the most important physicochemical characteristics of the exudate obtained from the fruit of the Artocarpus Heterophyllus Lam tree, better known as jaca or jackfruit, to establish its potential as a raw material in different industrial sectors. The latex was extracted by two methods: natural exudation and by the use of solvents, obtaining better results with the first method. The total solubility of the latex presented with xylene and toluene and partial in chloroform. The presence of saponins and phenols was determined qualitatively. The ASTMD 1278-91 A standard was used as a reference for quantitative tests. In the results of the resin FTIR, the characteristic bands of the carbonyl group at 1706 cm-1 and 1152 cm-1 are observed, indicating the presence of the ester group. In differential scanning calorimetry 3 endothermic peaks were detected at temperatures of 182 ° C, 395 ° C and 445 ° C and a glass transition temperature of approximately 60 ° C. The presence of phenols and their solubility in aromatic compounds indicates that they are phenolic type resins, with carbonyl groups in their structure, identified by FTIR, which are currently used to give impermeability due to their high resistance to moisture, which enhances their possible Application in the paint and varnish industry. Similarly, the presence of saponins favors it for use in the soap industry.
